I bought some Zucchini with the intent to make zucchini pasta. It is one of the staples at our home, we make it almost every week, especially when it is zucchini season (summer). I tell people all the time the way I can tell when something is on season is not that I memorized or I plant vegetables myself, because I don’t! I have no idea on how to plant most things it is embarrassing. But hey who grows up in the city nowadays and knows how to plant carrots, potatoes, zucchini? I don’t even know if you do it with a seed or a piece of the plant. I am getting off track here LOL back to the Zucchini loaf.
The Zucchini was bought online with Fry’s ClickList. Because shopping with a Toddler and newborn is something I rather not do if I don’t have to. I am always amazed by the moms I see at the grocery store wearing one baby and the other in the cart seat. Props to you mama! But I am not one of those super moms. Well the first time I ordered they gave me some zucchini’s on steroids hahaha they were huge. This time they were baby ones! So it was not enough to make noodles for the family. No problem I will chop them up and add them to the tomato sauce and use regular pasta noodles instead…except…pregnancy brain! Yes even after birth you can suffer pregnancy brain. I forgot the zucchinis and ate the pasta without them. But I could not afford to just waste the zucchini so I thought about it and voila! I have been wanting to make zucchini loaf for quite a while, so that is what I will do. I looked up the recipe for it in one of my favorite cookbooks. Miss Vickie’s Kitchen. Link below.
Soon I realized I did not have the two loaf pans it asked for, so I decided to substitute one of them with a muffin one instead right? I figure I just have to pull those out first since they will cook faster.
I also substituted the walnuts and raisins for chocolate chips, dark chocolate and white. My husband doesn’t like nuts on desserts. Which is sad cuz I love them. Plus I did not have any raisins.
It turned out great! Husband, kids and friends all approved.
