Vegetarian Spinach Salad from the Golden Temple Vegetarian Cookbook.This is a simple salad you can eat any time! Lunch, Snack or Dinner.
- Spinach leaves
- Carrots, shredded
- Cucumber slivers (you can use potato peeler to cut)
- Onions, sliced
- Cherry or grape tomatoes
- Fresh minced garlic
- Juice of 1 lemon
- 1/2 cup oil
Goes great with lime-mint dressing too!
- Wash and drain desired amount of spinach leaves.
- Toss with shredded carrots, cucumber slivers and very thinly sliced onions.
- Garnish with cherry tomatoes.
A tart dressing such as the ones above is best with this vegetarian spinach salad. Spinach is a superfood. This food is low in Saturated Fat, and very low in Cholesterol.
