Vegetable Omelette Recipe
One of my go to quick easy meals is an omelette! In a hurry, lazy or whatever… It is nutritious!

Ingredients:
- butter
- onion, chopped
- red bell pepper, chopped
- green bell pepper. chopped
- zucchini, grated
- Baby spinach
- Dry parsley salt
- Organic free range eggs
- Cheese
Directions:
- Beat eggs with parsley salt
- Sauté onion on butter
- Add bell peppers
- Add spinach and zucchini
- Set aside
- On another skillet pour eggs. When they are cooked but still soft put vegetable mix inside, top it with cheese and fold in half.
- Cook for another minute to melt cheese.
- Serve with side salad.

Be as creative as you like with a vegetable omelette and add your favorites. Whenever I add something unusual to my omelette I remember winter vacations with my cousins. We were not even teenagers yet but we were just as wild and got home some times late at night and hungry. My cousin would make the craziest omelettes, while he was making them I thought it would be disgusting, but then was pleasantly surprised when I ate it and it was great! He was the omelette king. Nothing was off limits for him. Ham, cream cheese, spices, garlic, arugula, whatever! Those were fun times in the kitchen!
