Vegan Banana Muffin you can make at home with ripe bananas! I like to eat my bananas before they are fully ripe. Once they are ripe they are too sweet for my liking but they are perfect for making banana muffins. So here is a delicious way to not waste you ripe bananas. Oh yeah I only eat organic bananas by the way… They just taste better.
- 1 ripe organic banana mashed
- 2 Tablespoons rice flour
- 1 Tablespoon tapioca flour
- a dash of cinnamon
- a dash of clove and ginger powder (optional)
- 1 Tablespoon olive oil (may substitute for coconut oil if you like)
- 1 Tablespoon chia seeds
- 1 Tablespoon apple cider vinegar
- 1/2 teaspoon baking soda
- 5 Tablespoons of water
