This Sardine Couscous Recipe makes a beautiful and delicious dish! You won’t even notice the sardines to tell you the truth. Sardines are great for your health because they contain healthy oils that give you the good kind of cholesterol.

Ingredients:
- 3 garlic cloves
- 1 large onion
- 3 tomatoes
- 1 cup of frozen peas and corn
- 3 hard boiled eggs
- 1 cup of olive oil
- 1 cup of water
- 2 tablespoons of butter
- 1 chili pepper
- 8 green olives
- 8 black olives
- 8.8 oz/250 grams of toasted yellow cornmeal
- 1/2 cup chopped parsley
- 2 green bell peppers, chopped
- 3 cans of sardines in oil
In a large saucepan place the oil and add the onion, the chopped bell peppers and fry until cooked, then add the chopped tomatoes, and butter, let it cook for half an hour, add water and previously cleaned sardines, garlic, parsley and chili pepper, finally add the corn flour last(the dough should be a little moist). Let it cook for another 5 minutes. Mounting: grease a round shape baking dish with central hole in the bottom with butter and garnish with egg slices, and olives, place the couscous on top, tighten, let cool for 15 minutes and unmold.
