Paleo Pesto recipe, easy and healthy! This recipe is also vegan. Paleo is a life style where you eat like a caveman before there was farming, processed foods and fast food. It is a healthy way of nourishing your body and works for a lot of people. This paleo pesto is made with raw cashews instead of pine nuts (the traditional way) because of the cost, but you can use pine nuts also. I love this pesto! I can’t even tell there is no cheese. It is creamy and tasty! I dare say better than the original pesto.
Makes about 1.5 cup
- 1/2 cup basil leaves
- 1/2 cup raw cashews soaked
- 1/4 teaspoon crushed red pepper
- 3/4 cup cold pressed olive oil
- 1 tablespoon garlic, minced
- 1 fluid ounce/ 30 ml lemon juice
- Place all ingredients except oil in food processor.
- Add the oil until smooth
You can enjoy pesto on your spaghetti squash pasta, on bruschetta, salad or anywhere your heart desires!
