Pomegranate-Champagne Drink
I love champagne! New Years is the perfect time for it. Why not have some fun and play a little?Surprise people with some tasty colorful drinks! This champagne drink, you can make a bunch and leave it in a large bowl or dispenser that way you can also enjoy the party. I love mixing fresh ingredients in my recipes. Mint is one of my most favorite herbs to put in drinks. It makes things tasty and refreshing. Mumm is a good quality and affordable sparkling wine. You don’t need to use top quality like Don but also don’t want to give your guests a headache with cheap champagne.
Makes 12 servings
ingredients
- 1/2 cup water
- 1/2 cup sugar
- 2 750-ml bottles chilled brut Champagne
- 1 1/2 cups white rum
- 1 1/4 cups pomegranate juice
- 1 large lemon, thinly sliced
- Pomegranate seeds
- Fresh mint leaves
- 1 ice block or 5 cups of ice cubs
Directions
Bring 1/2 cup water and sugar to boil in small saucepan, stirring until sugar dissolves. Simmer 5 minutes. Cool syrup completely.
Combine Champagne, rum, and pomegranate juice in punch bowl. Add enough syrup to sweeten to taste. Mix in lemon slices, pomegranate seeds, and mint leaves. Add ice to bowl.
