Dijon Delight Sandwich is a vegetarian sandwich full of flavor. It is not your usual veggie sandwich and you might find the ingredients different, but together the combination is balanced and tasty! I am a big fan of mustard so for me this was a great sandwich.
- Pumpernickel bread slices
- Cheese slices
- Onion slices
- Tomato slices
- Dijon Mustard
- Dill Pickles
- Spread honey on one side of pumpernickel bread. (The bread makes a huge difference. I was unfamiliar with pumpernickel before, it has a unique taste and is delicious!)
- Place on it a slice of cheese, lettuce, onion, tomato, dill pickle and Dijon mustard. (I used swiss cheese because it is one my favorites but you may use any cheese you like. The lettuce was hiding in my fridge so I used the baby spinach I found instead and it was still great.)
- Top with another slice of bread.
Have it for lunch or as a snack!
I usually don’t like onions in my sandwich but with the combinations of these ingredients it actually went really well and I enjoyed every bite.
