This carrot marmalade bread recipe is another delicious bread made with healthy ingredients. This one is even more cake like than the last one we made Banana Oatmeal Bread. The good thing about these breads is that you don’t need a machine or to knead and let sit the dough for hours. It is super easy to make compared to the regular bread process and the end result is delicious!
Makes 1 loaf
1/2 cup honey
1 tablespoon soy flour
1 1/4 cups cooked mashed carrots
1/4 cup milk
1 tablespoon lemon juice
2.5 cups sifted flour
3 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1/2 cup chopped pecans
1/4 cup orange marmalade
2. Sift together flour, baking powder, baking soda and salt and add to the carrot mixture along with the nuts. Mix well but avoid beating.
3. Spread marmalade evenly on the bottom of an 8×4 inch loaf pan. Pour the batter into pan and bake at 350° about one hour.
4. Remove the bread from the pan and let cool on wire rack. Wrap tightly and store at least 24 hours before serving.
So I substituted the pecans for walnuts because that is what I had. Still tasted good. We could not wait to eat it 24 hours later hahaha and it was good but on the next day it was even better! So if you can…wait the 24 hours before serving. It soaks in the flavors. Hope you enjoy!
