These BBQ Vegetables will make a great, fun, colorful addition to any BBQ.
People tend to joke around and say “Ok Siri I will bring some lettuce for you”. My cousin once even said “I don’t know what would be the point for you to go to a BBQ”. Well for those of you that think that BBQ is just meat I got news for you. I can make things on a BBQ that will have you licking your fingers and being just as satisfied.
So there I was chopping my onions and zucchini and sticking them on the kabob with some grape tomatoes. People looked and asked what I was doing and did all sort of funny faces. I just said wait…. I threw a couple of sweet potatoes on the coals surrounded with foil paper. Then I grilled my veggie kabobs.
As soon as I got them out they were gone. And the new friend even came to me to say – Yeah I was not putting much faith, but I have to admit, the veggie stuff was really good and the people really enjoyed it. The sweet potatoes were delicious as well, no seasoning needed. They were sweet, soft and moist. Besides that we also had garlic bread and grilled cheese. So I was one happy, satisfied vegetarian I even had a couple of people ask me for the recipe. So I thought I might as well share it here.
- Put the little wood skewers to soak in water for about 30 min.
- While they are soaking chop your veggies. I used zucchini, grape tomatoes, purple and white onions, but you can use bell peppers, eggplant and mushrooms too if you like. The tomatoes and mushrooms don’t need chopping.
- Stick them on the wood skewers and glaze them with the following mixture.
- 2 table spoons of extra virgin olive oil
- 1 table spoon of mustard
- 1 table spoon of honey
When they are ready, take them out and drizzle some coconut aminos or Briggs aminos (or whatever healthy salt you like to use) sauce on top.

I found out from my sister that you can also do the same thing on foil paper. Instead of putting them on the skewer make little foil paper packets and put them on the grill. I am going to try this next time, sounds great! Less work, less burned vegetables and more juicy.
