Apple cake – Yes you read it right CAKE not just pie. Delicious! Rich, full of flavor and satisfying! Made for sharing with lots of love! This cake has not only apples but also raisins and walnuts. For the best cake use the best ingredients. I used organic ingredients. I am by no means a pastry chef or good baker and it turned out great! If I can make it, you can make it too!
Serves 10-12
- 2 cups whole wheat pastry flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1.5 cups honey
- 2 eggs or egg replacer
- 1 cup oil ( I used organic coconut oil)
- 1 tablespoon vanilla
- 1 cup coarsely chopped walnuts
- 1 cup raisings
- 4 medium apples, peeled, cored and coarsely chopped (I was lazy to peel hihihi)
Directions:
- In a small bowl, mix first 4 ingredients.
- In a separate, large bowl, mix remaining ingredients.
- Add dry mixture to wet all at once. Don’t blend, just moisten.
- Bake in an oiled 9×13-inch pan at 350° F/180° C for 45 minutes. Let it cool, then frost.
I thought I messed up my batter because it looked to liquid… However most of the liquid evaporated in the oven and it turned out perfect, so don’t worry and just trust.
Frosting:
- 1 8-ounce package cream cheese, softened
- 1 tablespoon vanilla
- Raw honey
- 1/2 cup chopped walnuts
Whip cream cheese and vanilla, adding honey until frosting is the right consistency for spreading. Garnish with walnuts.
Add honey bit by bit and whisk by hand, if you use the machine you’ll make a mess. Trust me hahaha I learned the hard way. I split my cake into two because I don’t eat that much sweets and then I was able to gift another family this sweet delicious apple cake treat!
